Happy Cow Meatloaf

INGREDIENTS
2 lbs. ground turdey breast
1 lb. ground pork
1 lb. ground lamb
3 cups grated carrots
8 cloves garlic, minced
2 1/2 cups finely chopped onions
1/4 c ketchup
1 1/2 cups old fashioned rolled oats
4 eggs
1/2 tsp. cayenne pepper
freshly ground pepper to taste

There's no beef in this meatloaf, it's savory flavor comes from lamb. To lower the fat content, increase the percent of turkey used. The fat content in all ground meats varies from store to store. If you're left with a lot of boiling fat and shrinkage after cooking, switch stores.

Using a food processor to grate the carrots and chop the onions and garlic speeds up the process and makes a more uniform meat loaf. Combine all ingredients in a very large mixing bowl. Mix together using the same motion as kneeding bread until all ingredients are well mixed. Press into 3 loaf pans. Bake at 350 degrees for 1 hour. No, it's not a gourmet condiment, but ketchup is highly recommended! This meatloaf freezes well after cooking and is great sliced on whole wheat bread for sandwiches.
