Benny Blast Drink

INGREDIENTS
3 bananas
1 lb. silken tofu
calcium-enriched orange juice
yogurt (optional)
flax seed meal (optional)

Hectic mornings can be a challenge, especially for those with milk allergies. This morning smoothy assures a healthy start to a milk-free day. Add a bowl of whole grain cereal and you're good to go. Tip: Although soy milk can be tough to get used to straight, it's quite good on cereal.

Puree tofu, bananas, and enough orange juice to cover In a jug blender, or 2-qt pitcher using a hand blender, until completely smooth. Add enough orange juice to make a volume of 2 quarts and blend again. Makes 5 servings. You can make the drink the night before and refridgerate in a covered pitcher until morning. The top of the drink will brown slightly from the bananas. Yes, that's a little disturbing, but it won't hurt you. Just stir it in before pouring. Options: To accommodate individual tastes, divide into individual portions in cups large enough to accommodate a hand blender, then add everybody's favorite yogurt or seasonal fruit and blend till smooth. For an extra healthy boost, add 1 to 3 heaping tablespoons of flax seed meal and blend until mixed well. It takes a little getting used to the texture of the drink with the flax seed, but you just can't beat the health benefits.
